Menu Planning Monday #173

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

How was your week last week?! I am hoping it was a good one! We celebrated Valentine’s Day pretty low-key in our home with the kiddos, and it was pretty perfect. Winter sports are starting up, so easy dinners are my go-to! Here is our menu this week:

Cauliflower Rice Chicken Enchilada Casserole 

I love how many veggies are in this recipe! I will be using corn tortillas instead of the flour.

Sweet Peas and Saffron

Wednesday

Lemon Salmon with Greek Yogurt Dill Sauce 

I LOVE lemon salmon with a dill sauce, so this is sure to please!

Running in a Skirt

Thursday

Creamy Balsamic Chicken and Brussels Sprouts

This is a FAVE! Note, the serving size is for one! I usually triple or quadruple it!

Chocolate Salad

Friday/Saturday/Sunday

Leftovers, grazing…never know!

  1. I LOVE the idea of substituting cauliflower rice in your enchilada bake. My kids are so incredibly picky and I think I could totally sneak that in without them noticing. Great post! Thanks for sharing!

  2. I love recipes with lots of veggies “in” the main entree! I will be trying both the cauliflower rice chicken enchilada and the chicken and Brussels sprouts. Btw I love how often you schedule in leftovers I need to do more of that because otherwise I forget and waste them.

  3. I love leftovers, I mean who does not, okay scratch that my hubby does not. But sure it saves me the fresh cooking time when all I have to do is to warm up the leftovers and get eating. Thank you for sharing.
