Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
I am feeling all the feels this week with our baby turning one, so don’t be surprised if you see me a little emotional. And with it being Daylight Savings, we are all a little off, so easy it is!
Monday
It’s my baby’s 1st birthday so I want to make something I think he will just love, and I am hoping this Jackpot Casserole is it. It’s been a long time since I have made this, but my kiddos love it and I am hoping the birthday babe does, too!
Lady’s Little Loves
(Not a great photo. I took this one years ago when it was dark in the house.. but, kids loved it!)

Wednesday
Crockpot Salsa Verde Honey Lime Chicken Tacos
THESE ARE SO GOOD! Make them. Trust me. I sub Greek yogurt for the sour cream. And as a lighter option, you can add a little chicken broth to make it more like a soup, dice avocado on top and you’ve got a winner!
A Latte Food
Thursday
Kielbasa, Pepper and Potato Hash
This is just one of those go-to recipes I know the family will enjoy, and its simplicity makes for a great end-of-the-week recipe.
