Menu Planning Monday #64

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

I am feeling all the feels this week with our baby turning one, so don’t be surprised if you see me a little emotional. And with it being Daylight Savings, we are all a little off, so easy it is!

Monday

Jackpot Casserole

It’s my baby’s 1st birthday so I want to make something I think he will just love, and I am hoping this Jackpot Casserole is it. It’s been a long time since I have made this, but my kiddos love it and I am hoping the birthday babe does, too!

Crockpot Salsa Verde Honey Lime Chicken Tacos 

THESE ARE SO GOOD! Make them. Trust me. I sub Greek yogurt for the sour cream. And as a lighter option, you can add a little chicken broth to make it more like a soup, dice avocado on top and you’ve got a winner!
