Jackpot Casserole- Kid Approved

Jackpot  Casserole is something my brother-in-laws recently made for my kiddos and they LOVED it. It’s simple, easy to make and I am guessing called Jackpot Casserole because it’s such a hit with the little ones. We made it while visiting my parents recently and once again, a hit.

Ingredients:

1 TB olive oil

1 pound of (I use lean) ground beef

medium onion-chopped

1/2 packet of taco seasoning (original recipe called for 2 ts chili powder instead)

1/2 box of pasta -( I use wheat or a veggie pasta) can be macaroni, shells, whatever

16 ounces of tomato sauce

1 can of corn-drained (original recipe calls for creamed corn, I just didn’t have any)

1 can of black beans (optional)

large can of sliced olives

1-2 cups of shredded cheese (I used a blend)

Directions:

Heat olive oil on medium heat and brown  ground beef with chopped onion. Mix in taco seasoning, corn, black beans, tomato sauce and olives. Meanwhile, cook the pasta according to the directions on the box and then add to the mix. Transfer everything to a 9×13 baking dish and top with cheese. Bake at 350* for 20-25 minutes. Done!
