Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
I am still currently dairy-free due to the little man, so most of the recipes I choose reflect that. I am also obsessing over avocado and balsamic lately, so expect those two flavors as much as possible, too. š
Here is what we are having this week:
Monday
Ribeye Steak Salad with Balsamic VinaigretteĀ
Joyful Healthy Eats
Tuesday
Date Night = Macaroni and Cheese and turkey hot dogs for the kiddos
Wednesday
I asked Gwyn what one of her favorite dinners is, and she said Chicken Noodle Soup. So when I came across this recipe that uses zoodles, on the menu this recipe went.
Damn Delicious
Thursday
Spicy Southern Kitchen
Friday/Saturday/ Sunday
Can we just lump Friday into the weekend? I am going to go ahead and say, yes. We usually eat out one night, and then graze the kitchen with what we already have the rest of the time, so yep. That’s to be expected this weekend, too.
I love a steak salad! And that avocado chicken one looks great too!

Zoodles!!! I am so going to try that in soup. I’m looking for anyway to get my kids to eat more veggies.
I need to get better about meal planning and definitely need a spiralizer!!!
