Roasted Sweet Potatoes

I’ve made these roasted sweet potatoes more times than I can count the past few weeks — honestly, they’ve been on repeat at our house. They’re so easy to throw together, go with just about anything, and somehow turn out perfectly every single time. Simple, foolproof, and so good.

Ingredients:

  • Sweet Potatoes
  • Oil of your choice
  • Salt and Pepper to taste

Directions:

Preheat your oven to 375°F and line a baking sheet with parchment paper. Cut the sweet potatoes in half lengthwise, then drizzle your oil of choice over both sides and rub it in well (this helps them caramelize and makes such a difference!) Season generously with salt and pepper. Place the potatoes cut side down on the prepared baking sheet, making sure to leave a little space between each one so they can roast properly. Bake for 1 hour, or until tender and lightly caramelized. When you remove them from the oven, don’t touch them right away — let them sit for 15 minutes to finish setting up.
