Welcome to another Menu Planning Monday! Here I try to plan out healthy-ish, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Low Carb Taco Casserole 

This looks so good! I am going to sub Greek yogurt for the sour cream

Rigatoni with Sausage, Tomatoes and Zucchini 

This is a family fave! I use protein pasta and turkey sausage and it turns out great!

Baker by Nature

Chicken Avocado Burritos 

I sub Greek yogurt in this and they are YUM!

  1. The taco casserole was delicious! I did use cilantro rice instead of riced cauliflower – only because my guys would NOT go for that. Thank you for sharing!
