We mistakenly received someone else’s groceries last week and were told to just keep them, and most of these included items to make pad thai! So it almost felt essential to make a pad thai dish this week, and this one looks divine!

I LOVE a good chicken pot pie, but have never made one! The recipe says you can make it lower carb by skipping the bottom crust… but that’s the best part! So I will be using both crusts when I try it. YUM!
