Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Tuesday
I noticed this recipe doesn’t have a ricotta cheese or cottage cheese filling,so I will be adding in this layer with a mixture of cottage cheese, parmesan, salt, pepper, and an egg. I am also trying out using gluten-free noodles.
Update: Here is what I did for ours…
- I used Gluten Free noodles which I thought were great. No one in our family noticed a difference and I would totally use them again.
I used 2 lbs of lean ground beef instead of the sausage, and added, salt, pepper, and italian seasoning after adding in the pasta sauce. Because I added so much more meat, I should have added more sauce than it calls for, too.
I then mixed 16 ounces of ricotta cheese ( I used skim) with about 1/2 cup parmesan, salt, pepper, garlic salt, and 1 egg.
Layering- add a little of the sauce/meat mixture to the bottom of your greased pot, then add a layer of noodles, then spread as best you can a layer of the cheese mixture, followed by a layer of meat, and then a layer of 1/2 mozarella and 1/2 parmesan. I repeated until I had a total of 3 layers. I topped with a little parsley and then cooked on high for 3-4 hours.

This is our girl’s favorite and she requests it often. Instead of eating them as tostadas as the recipe has them, I just fold them up like tacos. Easy.
