Menu Planning Monday #198

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Whenever I cook these recipes, I film and show how they turn out over on my Instagram page, so feel free to stop by on those days to check out how they turn out! Here is what we have planned for the week!

Monday

Leftovers; I anticipate having leftovers from the Super Bowl, so leftovers it is this night.

Tuesday

It’s a Cooking with Shannon and Tina day today! I have teamed up with one of my favorite Instagram buddies, Tina over at @to_mimishousewego to cook a recipe on the same night to show you how it turns out for us both! Tina chose the recipe this week and I posted it below. Greek Salmon 

We had this two weeks ago and I had never cooked salmon this way; it was a huge hit!

This delicious and easy Greek Salmon is the perfect quick healthy dinner for the whole family. The marinade is a simple mix of olive oil, lemon, dill, and oregano. The fish is pan-fried, giving it a wonderfully crisp exterior and meltingly tender and succulent center. Perfect for serving with orzo and a Greek salad.
