Menu Planning Monday #186

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Two of the three of the recipes this week are insanely easy! The cabbage soup really isn’t hard, either, and I’ve even found a way to cut corners… see below!

Baked Ranch Pork Chops 

I can’t even remember the last time I made pork chops… if ever?! I found this recipe and love the simplicity of it… hoping it’s a winner!

Crockpot Low Carb Unstuffed Cabbage Roll Soup 

This soup is SO good! To make it even easier, buy pre-diced coleslaw cabbage and you don’t have to worry about the mess of dicing it all up.

This recipe is so easy to make and our family gobbles it up! I love Costco’s pesto, but I’m sure there are other pre-made pesto sauce’s too.

  1. Oh Shannon, you have obviously been in our fridge! I have some pork chops I need to cook, so I think I’ll make this version tomorrow. We had cabbage soup last week, but next time I make it, I may try this recipe. Pesto chicken looks amazing too. Thanks for this! I needed a little help with my meal plan this week!
