Menu Planning Monday #182

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

We are back to the school and sports schedule in full-force over here, which means if I don’t have our meals planned out for the week then I get stressed-out come 3:00 when I have no idea what we are having that night. So, below is our menu for the week!

Monday 

Baked Spaghetti and Meatballs

I will be subbing the noodles for spaghetti squash and using pre-cooked meatballs from Costco

Tuesday

Dinner does not get any easier than this 7 can chicken taco soup! Dump 7 cans into a pot plus some seasonings and that's it! Serve with tortilla chips, cheese, and sour cream. You won't believe how yummy & easy it is.

Sweet Potato Salad with Bacon, Walnuts, and Lime Vinegarette 

Don’t be intimidated by this recipe. It looks like a lot of ingredients, but it really isn’t. (Especially if you sub honey for the dates.) I keep out all spicy ingredients and I think I will also add either ground turkey or lean ground beef to this

Friday/Saturday/Sunday

Leftovers and whatever we can scrounge up!
