This past weekend I put together a Keto Pot Roast that my husband loooooved and I thought I would share it with you all today! It was really easy to put together and enjoyed by all.
Ingredients:
3 pound beef boneless chuck roast
1 tsp salt
1 tsp pepper
1 tsp Garlic Powder
3 TBS Worcestershire sauce
4 TBS butter (If wanting to make this lower fat, I think you could easily omit the butter and it would still be delicious)
3-5 pepperoncinis sliced into rounds- (I buy the pre-sliced ones in a jar and use about 15)
Optional- cut up carrots and celery (if not concerned about keeping it carb-free)
Directions:
(If adding the veggies, place them on the bottom of the crockpot, and place the meat on top of them)
Season both sides of the meat with the salt, pepper, and garlic powder and lay in the bottom of the crockpot. Pour the Worcestershire sauce over the meat and place the butter slabs and pepperoncini slices on top of the meat.
Cover and cook on low in your crockpot for 6-8 until meat is nice and tender and easily pulls apart. (Toward the end of cooking, if it seems the meat is still tough, turn the heat up to high to finish.)
Once the meat easily pulls apart, let it brown up for a few more minutes in the crockpot and you are left with nice, tender meat and a very tasty au jus!
