Menu Planning Monday #154

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Our house is getting painted this week! AHHH! As in, they start power-washing today… and I still haven’t 100% committed to a color! And that’s because I am the WORST at making decisions. I wish I were better at it! Anyway, one thing I DID decide on is this week’s menu. Here it is!

Tuesday

Crock Pot Cheeseburger Soup

To lighten this up, I bet you could use coconut milk and reduced-fat cheese and it would still be very yummy!

Sweet Potato Salad with Bacon, Walnuts and Lime Vinigareitte 

THIS IS SO YUMMY! I add lean ground beef to this and we are happy people.

Thursday

Slow Cooker Chicken Enchilada Soup

I love adding a dollop of Greek yogurt to this soup. YUM!
