Menu Planning Monday #152

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

We are still enjoying the last of summer break over here and trying to soak it all in! Has school started back up where you live?

Here is this week’s menu!

Monday

Grilled Balsamic Chicken with Mozzarella and Pesto 

I love how simple this recipe is, and will be using Costco’s pesto with this.

Tuesday

We are taking the kiddos to Silverwood and won’t be home for dinner this evening, so eating out it is

Wednesday

Baked Feta and Herb Crusted Salmon 

My daughter has been asking for salmon, this one looks amazing!

Thursday

Baked Spaghetti and Meatballs

I will be using spaghetti squash for the noodles and will be baking in a 9 x 13 dish

  1. These look great! I think I want to make the baked spaghetti and meatballs first! I’m always tying to find cool ways to use spaghetti squash. Thank you!
