Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
So much has happened in less than a week! Last Monday I shared how we were heading to San Diego, and that night we canceled the trip! Ha! Instead, we decided to stay home and give our master bathroom a little makeover. Well, it is 10:00 pm on Sunday night and I think I just sat down for the first time since Friday. My back is KILLING me, but oh my goodness, I cannot WAIT to show you how it turned out! (I am sharing sneak peeks on my Instagram stories if interested.) We are still working on some small details, so I will work on getting the reveal post up asap! In the meantime, here is this week’s menu! Can you tell I just don’t have the energy to do anything right now?! Ha!

Rotisserie chicken, canned green beans, and Hawaiian rolls
Tuesday
Rack of ribs from Costco and a bagged salad
Wednesday
Eating out
Thursday
Pulled pork from Costco, Hawaiian rolls, and corn on the cob
Friday/Saturday/Sunday
Who knows!
I will apologize now to those of you who come here weekly for recipe inspiration! I just do not have it in me to make any more decisions tonight, or even this week, so there you have it. If you’re having a busy/tiring/whatever week, know you are not alone! And this week, we will be eating on the easy.

Yes! Costco can be a life-saver! The weekend was non-stop, but so worth it!
This is the first time Ive visited your blog and I have to say, this is so refreshing!! I do weekly meal planning for our family and sometimes I legitimately have no energy to think of anything beyond a steak and potatoes kind of set up. So glad I found someone keeping it real and not telling me about 5 course meals they are prepping for their toddlers!

One of my favorite easy go-to dinners during those crazy weeks is actually eggs. I can either use whatever fresh veggies are on hand or some frozen veg from the freezer, sautee them up, crack a couple eggs over it, scramble it together, and have some roasted sweet potato on the side. Easy peasy and so delicious!
