Menu Planning Monday #132

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

This past week has been so productive and I cannot wait to share with you all what I have been up to! But until then, here are some meals to hopefully make your week just a little easier. We had a weekend full of food and it’s time to eat it up.

Tuesday

White Beans with Sausage and Spinach 

Mmmm this is a good one! I usually use 2 lbs of turkey sausage for this one.

Slow Cooker Jalapeno Popper Chicken Taquitos 

I lighten this one up by using reduced-fat or Greek cream cheese, mozzarella cheese and wheat tortillas, and I keep all heat out for the kiddos.

Thursday

Grilled Chicken Margherita 

I have not tried this one before, but I love every single ingredient in it!

  1. Ha, love the riddles! Solved ‘em 😉 I love the margarita style chicken. Anything with tomatoes, mozzarella, and basil/pesto is a winner. That’ll be a great recipe during the summer when it’s warm enough outside to grill the chicken. I could even chop it up and add it to some penne for caprese pasta!
