Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

I will say, planning out what sides are going to go with the meals ahead of time really helped me! So, I am going to try and make that a regular occurrence.

Monday

Healthier Cheeseburger Macaroni Casserole 

This is LOADED with hidden veggies and looks delicious! I will be using wheat pasta and serving alongside a (bagged) green salad.

Tuesday

Beef and Broccoli

I love beef and broccoli, hoping this comes out JUST like the photo! And I will serve with cauliflower rice.

Date night = No cooking for me!

Thursday

Slow Cooker Lemon Garlic Chicken 

Let’s go ahead and finish the cooking this week with a crockpot meal, yes? Served with baked asparagus and wheat Hawaiian rolls.

Going out for a friend’s birthday, digging around the house, leftovers…

  1. YUM!! Meal planning is something that I do but we eat pretty much the same thing all the time. Thank you for some yummy ideas so I can switch things up!
