Menu Planning Monday #95

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

My son finished preschool last week and my daughter has three more days this week and then we are DONE for the school year! And my friends, we are crawling across the finish line! So I made sure to choose meals this week that appear to be just throwing ingredients together and hoping a decent meal comes out the other side.

Monday

Chicken Avocado Caprese Salad

There are SO many of my favorite things in this salad! Avocado, mozzarella balls, basil and balsamic reduction… YUM!

Tuesday

One Pan Healthy Sausage and Veggies 

I love that this one just requires a bit of chopping and can all be cooked together. Nice and EASY! I think I will double it so we can have plenty of leftovers.

BBQ Chicken Tostadas 

These are SO yummy and one of my daughter’s FAVORITE meals. I just boil the chicken, use my mixer to shred it, mix in some bbq sauce, and while I heat up the tortillas I melt the cheese on top and BOOM. Done. Family fave.

Friday

It’s always a guessing game…

Saturday and Sunday

I think what would make my guy super happy would be to have a nice, chill day at home BBQing for Father’s Day. So, unless I hear otherwise, I think that’s just what we will do.

  1. I can understand why your daughter loves the tostadas! I spontaneously got hungry… Hope I have something in the fridge that comes close to these delicious dishes.

  2. I can’t wait to try Mon – Weds! We have a family of six, so never any leftovers in our house. Luckily on the weekends my husband cooks and usually barbecues, kids are in charge of helping him while I put my feet up! Thank you for the lovely healthy ideas!
