Menu Planning Monday #96

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

It’s finally summer vacation! WAHOO! I’m starting to get a little more momentum back in the kitchen now that we don’t have so many obligations and these recipes all look like they will serve us well.

Monday

Tomato Basil Artichoke Bake

Tuesday

Lightened Up Mini Meatloaf 

This recipe is enough for our family of five, but if we want leftovers, I double the recipe as there is never a bite left if made as-is.

Sausage Stuffed Portabello Mushrooms

Packed with protein and low carb, these look SUPER good and I can’t wait to try them

Dinner plans = leftovers for the kiddos

Friday/Saturday/Sunday

This weekend is Hoopfest, which is the largest three-on-three basketball tournament in the world, and we have two people from our family playing this year, so with so many games and not being able to plan meals around them, I am keeping our options open.

  1. I love all these dishes! Which to try first?? I think the Sausage Stuffed Portabello Mushrooms will be it, who can say no to sausages and mushrooms? 🙂
