Menu Planning Monday #89

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Two of the three recipes are tried-and-true favorites, and I have high hopes for the third!

Monday

BBQ Chicken Tostadas

We had these a couple of weeks ago and the whole family devoured them. Super easy to make, too! I cooked the corn tortillas on the stove, softening them up, and we ate them more like a taco and they were delicious.

(Hint- Cook enough chicken for this recipe and Thursdays, then you’re set!)

Cupcakes and Kale Chips

Tuesday

Cal requested spaghetti and meatballs… so that’s what we will have!

Wednesday

Chicken Sausage and Broccoli Rabe Penne 

I have no idea what broccoli rabe is, so I am just going to substitute regular broccoli for this one.

  1. That penne looks so good!! I haven’t had pasta in awhile but this is the second time today I’ve found myself drooling over it, I think it’s time to have some!

  2. I love your concept: “planning healthy meals so you don’t have to!” That’s great 🙂 And I am obsessed with that Chicken Sausage dish. It. Looks. Incredible! I’m pinning this for later reference…I’m sure it will come in handy around Wednesday afternoon when I’m a little lacking in cooking motivation 🙂

  3. Oh man that penne looks divine! If you don’t want to use broccoli rabe, I would suggest broccolini. It has a more mild flavor than broccoli and better texture, in my opinion. It reminds me of a mixture between broccoli and asparagus.
