Menu Planning Monday #88

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

And here I sit Sunday night still full from the feast my mother-in-law made for Easter, so while it’s hard to think about food right now, these meals still seem to stand out and I am excited to try them!

Leftovers again or pigs in a blanket

Wednesday

Slow Cooker Garlic Parmesan Chicken

The husband is working late this night, so I want something that will be ready to eat at different times, and this looks promising!

Skinny Coconut Shrimp

One of Gwyn’s all-time favorite foods is shrimp, so these are sure to please!

Paleo/Gluten Free Chicken Cabbage Stir Fry

The husband and I have a date night this night, but if I were home cooking, I would really like to give this one a try… If you try it, let me know how it turns out!
