Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
I’ve got a list of all new recipes this week that I am so excited to try! Two of them were recommended from friends and I appreciate that very much!
Monday
Spaghetti Squash with Bacon, Spinach and Goat Cheese
I’m not sure my kiddos have ever tried goat cheese before, but now seems like the perfect time! This recipe looks delish! And because my husband considers a dish without/very little meat a side dish, I think I will add some sausage to this as well.
Tuesday
Date night = ham and cheese roll-ups for the kiddos
Wednesday
Pepper Pizzas
My sweet friend, Kara, shared this recipe with me and said they were a HIT with her family, so of course I have been excited to try them out!
Directions: (recipe for 1)
Take half a bell pepper (probably yellow or red, not green)
Put a little pizza sauce in it, fresh mozzarella, and any pizza toppings you’d like!
(We flattened them a little too)
Then broil
The pepper as a crust was so good and not soggy.

Ooo pepper pizza sounds like a great low carb alternative. Love it!
