Menu Planning Monday #81

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

I  must be on a chicken kick because somehow I have chosen an all-chicken line-up this week! I think I may sub steak in the burrito bowls to change things up. There. Now I’m not so predictable.

Monday

Greek Lemon Chicken Soup 

This looks like it will just warm everything right up! We are STILL getting snow where I live. UGH.

And instead of the couscous, (what is that?) I am going to be subbing it with cauliflower crumbles.  Tip! You can buy pre-packaged cauliflower crumbles at Wal-mart! Another tip! Do the grocery pick-up! It’s life changing! Get a $10 off code HERE.

Date night = leftovers!

Wednesday

Awesome Bacon Apple Chicken Salad- Whole 30, Paleo, No Sugar Added 

This looks really good to have in a sandwich, as-is, and as leftovers.

I LOVE this recipe. I also add grilled chicken, black beans, and I don’t always add the salad.

The parents are playing volleyball and thus, we shall eat leftovers.

  1. This is perfect! I need healthy meals for lunches- I actually prepped my meals this week for the first time in sooooo long. I made all my salads and packed healthy snacks for my long workdays! Its such a nice feeling not having to scramble. These recipes look delicious!!
