Menu Planning Monday #80

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Two of the three of these recipes are tried and true favorites, and I have REALLY high hopes for that shredded beef… I mean it just looks so tasty!

Monday

Creamy Balsamic Chicken and Brussels Sprouts 

This recipe is SO good. Our whole fam gobbles this one up. I recommend doubling the sauce! Leave out those mushrooms, Meg, and I think you’ll enjoy!)  Whole 30 approved, too!

UPDATE! The recipe listed serves one, so take that into consideration when making! I tripled the recipe and wished I had made way more. We gobbled this up tonight!

Thursday

Mexican Chicken

For this recipe, I season my chicken with taco seasoning and then put in the crockpot before covering with enchilada sauce. I cook on low and then about 30 minutes before serving I top with the shredded cheese. EASY recipe that can be eaten as-is, or put in tacos.
