Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
Two our of the three meals lined up for this week are family favorites, and the third has yet to be tried but looks super tasty and I am looking forward to trying it!

Date nights are back! Hallelujah for the babysitters being back in town after that LONG holiday break. So, leftovers for the kiddos.
Wednesday
THESE ARE SO GOOD! I sub sour cream for greek yogurt and dijon for yellow mustard. I also use wheat tortillas.

Because I will already be buying Cauliflower Rice for the first recipe, I also plan on using it instead of traditional rice for this recipe, too.
