Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
So this week is all about creating meals out of things I already have in my fridge, pantry and freezer because OMG! I made a huge mistake in taking my husband to Costco with me and somehow our bill trippled! I mean, I know how it happened… and I have taken a vow to never bring him again!
So, now it’s my goal to use up all of that whatever we bought and even things out a bit. 🙂
Monday
I have leftover lettuce from last week, plus we have COSTCO turkey burgers, bacon and avocado, thus, I think I will make turkey burger wraps inspired by this recipe.

Creamy Lemon Chicken with Asparagus and Mushrooms
Again, using COSTCO chicken, and since we already have extra asparagas from last week, all I need for this one is mushrooms. Perfection.

Mac ‘n Grilled Cheese Tomato Soup
I only need two ingredients from this recipe as well and this one looks like a slam dunk with the kiddos. Gwyn LOVES grilled cheese and tomato soup, and Cal LOVES macaroni and tomato soup. Success.

The lettuce wraps look great! I’m a big fan of tuna on lettuce instead of bread. I will have to try your recipe.
Uhh…save me some of that soup! Oh please oh please! LOL I should probably just have those wraps though. They look delish too 🙂

WOW. So my food doesn’t look nearly as good as this does! But I am excited I finally got the family involved in the meal planning process. It only took me about 7 years or so.
