Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
We’ve got a busy week filled with back-to-school and soccer nights, so we are trying to keep it simple!

Grilled Lime Salmon with Avocado Mango Salsa and Coconut Rice
We’ve got some salmon in the freezer from our last trip to Seattle and this mango salsa looks delicious. Plus, Costco also sells a pretty dang good mango salsa if you want a shortcut, too!

Date night = pizza roll-ups for the kiddos
Wednesday
We eat early dinners (I’m talking 4:30-grandparent-status early) on soccer nights, so this looks like an easy meal that our whole family will enjoy and one that I can have done early.
