Menu Planning Monday #38

Welcome to Menu Planning Monday!

For some, one of the worst parts about menu planning is actually deciding on what to make. I find myself stressed out once the late afternoon hits and I have no idea what we are having for dinner, so if I want to prevent that and stay on top of things, menu planning it is. Each week I try to plan for healthy meals that currently do not include any dairy or that can easily be adapted (baby is intolerant), that don’t include a bunch of crazy ingredients and that will get me in and out of that kitchen as quickly as possible.

Here is what we are having this week!

Monday 

Cilantro Lime Chicken Sliders with Tomato Guacamole

Tuesday 

Date Night = Leftovers/Something easy

Wednesday

Spaghetti Squash with Vegan Tomato Basic Cream Sauce 

I’m thinking paired with chicken and this will make the whole family happy campers.

Saturday and Sunday

Leftovers and picking something up one night I am sure.

  1. I have one kid convinced spaghetti squash is ok. The hubby and the other one are still against it. Eventually they will give in. LOL The salad looks AhMazing!

    1. I have our fam convinced they’re “baby noodles!” Haha the kiddos have no idea! And The Hubby approves, too. Keep workin’ on them!

  2. I really am interested in a lot of the meals you have listed. I always struggle with finding healthy easy meals to make during the week. Everything you have here looks really yummy and I look forward to trying these.
