No Bake Energy Bites

With about a dozen cookies down the hatch to myself, I decided I needed something healthier that would take the edge off. And these babies did just that. I had all the ingredients on-hand, they were super quick to throw together and completely satisfied any cravings I had. Plus, my kids love these, too and have been gobbling up their dinner just to have one afterward.

Magic, I tell you.

No Bake Energy Bites 

Yields about 12-13

Ingredients:

1 cup dry oatmeal (I used old fashioned oats)

2/3 cup coconut

1/2 cup natural almond or peanut butter (I used Adams)

1/2 cup ground flaxseed

1/2 cup chocolate chips or dried fruit

1/3 cup honey (or Agave)

1 ts vanilla extract

Directions:

Stir all ingredients together in a medium bowl. Cover and chill for about 20 mins in the refrigerator. Once chilled, roll into the size of golf balls, or to the size of your liking. Keep in an air tight container in the fridge. Enjoy!
