Grilled Caprese Chicken with a Balsamic Reduction

Oh Pinterest, you’ve done it again.

This grilled caprese chicken with a balsamic reduction recipe was SO good. SOOOO so good. And EASY! The Hubby was beyond impressed and that, of course, makes me feel good.

Here is the original recipe, and below are my adaptations.

Ingredients:
  • 6 grilled boneless, skinless chicken breasts
  • 2-3 Tbs olive oil
  • salt and pepper to taste
  • 1 ts basil
  • ¼ cup balsamic vinegar
  • 1 tablespoon butter
  • 6 slices mozzarella cheese
  • 6 slices tomato
  • 6 large basil leaves (My neighbors gave me a bunch of fresh basil from their garden which was PERFECT for this recipe! So fresh!)
 Instructions:
  1. Season chicken breasts with olive oil, salt, pepper and basil. Grill on BBQ until done, or bake at 350* for 1 hour until done (This is what I did.)
  2. As chicken is cooking, pour balsamic vinegar into sauce pan or skillet and cook until reduced by half. Add in butter and stir with a flat whisk until completely combined. Set aside.
  3. Top chicken with mozzarella cheese, basil leaf, and then tomato slice.
  4. Drizzle with balsamic reduction and serve warm
