I LOVE easy, healthy and tasty dinner recipes, so when I came across this one on Pinterest I thought I’d give it a go since it included minimal ingredients and steps. The best thing about this recipe is that it can all be made in ONE pan. I was a little surprised by how quickly this recipe was put together and even more surprised by how good it was! The Hubby said it was hands down one of the best things I have ever made. Uhhhhhh, fabulous compliment! Little does he know how easy it is to make!
Below is the recipe with my slight alterations:
Ingredients:
1 tbsp olive oil
1 lb turkey sausage
1 cup diced onion (save your eyes and time and buy the pre-packaged kind!)
2 ts. chopped garlic
2 cups low-sodium chicken broth
1 (10 oz) can Ro-Tel tomatoes and green chiles, Mild (a little spicy for kids, use regular diced tomatoes if concerned about spice.)
1/2 cup heavy cream
8 oz whole wheat penne pasta
1/2 teaspoon salt and pepper, each
1 cup cheese, shredded (I use mozerella if I want to save a few calories, or pepperjack if I want to add a kick)
1/3 cup thinly sliced scallions (optional)
Directions:
1. Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
2. Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.
3. Remove skillet from heat and stir in 1/2 cup cheese. (You can be done after this step and it’s still very tasty. If you’d like a baked top, continue.)
4. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown, and bubbly. (If your pan can be placed in the oven then you won’t need to transfer to a baking dish; if it can’t, transfer before baking.)
