Low Fat Cauliflower Fritters

I don’t cook a lot with Cauliflower. But, The Hubby bought a couple heads of it a while back with the intention of making a cauliflower cheesy bake dish, which is pretty dang tasty, but he never got around to it. So, I needed to figure out what to do with said cauliflower and after a little internet research, I settled on cauliflower fritters. I found the original recipe here, and below is the recipe with my very slight alterations based on what I already had on-hand. They are SO GOOD.


Ingredients

  • 4 cups steamed cauliflower (roughly chopped)
  • 2 ts chopped garlic
  • 1 cup whole wheat flour
  • 2 eggs
  • 1/2 cup grated Parmesan
  • 1/4 cup parsley, finely chopped
  • 1/4 cup hot water
  • salt and pepper
  • 1/4 cup olive oil

 


In a large bowl, combine cauliflower, flour, garlic, eggs, parmesan, parsley, salt and pepper. Add water so that batter becomes slightly more dense than pancake batter.

On medium-low heat, add 1 tbsp of oil in a 10 inch skillet coating bottom of the pan.Use a 1/4 cup measuring cup to form fritters. You can fit 4-5 fritters at a time. Cook until golden brown, turn and cook another few minutes. Add a little more oil to the pan, and repeat with the remaining batter.


My whole family loved these. I myself ate about seven in one sitting. The Hubby continually complimented them and The Toddler ate a couple herself! You too, will enjoy.
