It was probably the easiest thing I have EVER made, and I even felt a little guilty for making such an simple meal. Almost like if I don’t sweat a little bit while making it, then I shouldn’t serve it to my family. But this? Oh, this I will be making again.
My toddler is picky. Like, throw-food-overboard-if-I-don’t-like-it-and-make-Mama-mad kind of picky. She pretty much eats the same things day-in and day-out. Last night was different though. That meal was loaded with lean chicken (not breaded like the only other meat she will eat!) and vegetables! A mother’s dream!
I found the recipe online at Allrecipes.com, my usual go-to site for recipes.
All you need is a pound of chicken cut up into bite-size pieces
A small 16 oz (or so) bag of frozen veggies (I used an 11oz bag because I liked the veggies included)
1 can of Cream of Chicken Condensed soup (I bought the 98% Fat Free kind)
8 biscuits (I prefer wheat bread, so I just used those little wheat Sandwich Thins instead of biscuits)
That….. is IT. I doubled the recipe hoping for leftovers, and also knowing that my Hubby eats more than “one serving.”
Cook that chicken up in a skillet and then add in the frozen veggies and soup and let the veggies cook through.

That…. is IT. I then sprinkled Paula Dean’s House Seasoning (garlic salt and a little pepper will do the same thing) on the sandwich thins and put them under the broiler for a minute to make them “toast-like.” I then put some of the mixture on the open-faced toast slices and was donezo.
I called the Hubby in from his “Dog House” for dinner, and he snickered when he saw what I had made. I admit, I too laughed handing it to him, as like I said, I felt guilty.
I expected my daughter to take one lick and not touch the rest, staring at me with pleading eyes to make her something else, in which I usually do. I was pleasantly surprised tonight. I put some in a bowl for her and to my amazement, she devoured it!!! The chicken, the veggies… the entire bowl! I was in disbelief and stood in front of her stunned, just watching each spoonful go into her mouth.

AND THEN SHE LICKED THE BOWL!!!
A toast slice and a handful of grapes later and this little girl had a complete, healthy meal. As the hubby took his plate back out to his “Dog House” to work, I heard him say,
“Oh, Bun (nickname) thisis good” sounding quite surprised as he took a bite walking outside.
And THEN when he came inside from working he said,
“No joke, that pot pie recipe was bomb. I can’t even imagine it with biscuits.”
(!!!) (Smile, Smile, Smile!) Well haut dawg! I too enjoyed the meal as I felt like I was giving the Little Man some good nutrients. And maybe next time I will spring for the biscuits too. 🙂
This will be a go-to meal in our house from now on when the day has gotten away from me and I need something quick and healthy to throw together. Hope you all find it useful in your households too!
