When I need a quick meal, pizza is one of my go-to options, especially because I can add in a ton of veggies that will be consumed by all.
Ingredients
Pre-baked pizza crust
1/2-1 cup marinara sauce (recipe below for veggie marinara)
1/4-1/2 cup mozzarella cheese
Desired toppings
If I have meat readily available, then I will cook that up for a topping, but we often  just use veggies too.This night I had turkey sausage, so I took one sausage out of the casing and cooked it on the stove until cooked through, crumbling along the way.

I also keep a pizza crust on hand, my favorite being the Golden Wheat by Freshetta. This is the “sortof” in the title. Homemade crust isn’t too difficult to make, but sure does take time. That which I am not usually willing to give to pizza dough.

Preheat oven to 400*. Spread about 1/2-1 cup of marinara sauce over the pizza crust. Then top with 1/4-1/2 cup mozzarella cheese, followed by your favorite pizza toppings. I used leftover corn-on-the cob and red bell pepper to go along with the turkey sausage here.

Then, bake in the oven on the rack for 10 minutes, or until crust starts to golden.

Such a quick meal and is enjoyed by all in our house. The Hubby especially liked the topping combo this night.

If you want to add in even more veggies to a meal, consider making your own veggie marinara.
Veggie Marinara: 
Ingredients:
Desired veggies ( I used bell peppers and carrots this time, but usually have mushrooms too)
1 ts. Olive Oil (Or Cooking Spray)
2 ts. chopped garlic ( I buy mine pre-chopped in the little jars. I just do. It’s faster.)
1/2 cup chopped white onion (Sometimes I will even buy this pre-chopped. I’m usually cooking with Cal strapped to my chest and don’t want the onions to burn his little eyes while chopping. That, and it’s faster.)
1 28 oz can crushed tomatoes
1 ts. Oregano
1 ts. Basil
Salt and pepper to taste
Put desired veggies in food processor or chop really fine. I used to chop the veggies until a friend mentioned to put them in a food processor…. duh!
 Saute garlic for a few minutes in the olive oil (or cooking spray), chop onion and add to garlic, sauteing until translucent. Then, add in the veggies and saute until tender.

Add in crushed tomatoes and spices. Bring to a light boil and then turn the heat down to low, cooking for about 20 minutes.
