Meal Prep Recipes

I like to meal prep to make the week a little easier. Having some grab-and-go options ready for breakfast and lunches makes busy mornings so much simpler!

Whenever I cook recipes, I film and show how they turn out on my Instagram page, so feel free to stop by to check out how they turn out. Here is what I prepped for the week.

Egg Bites

  • 3 English muffins *
  • 18 eggs
  • 1.5 cups cottage cheese
  • 1.5 Ibs sausage
  • 1/2 chopped bell pepper 2-3 diced green onions
  • 1/3 cup shredded cheese
  1. Cut English muffins in half, and then cut each half into fourths and put one piece into the bottom of each tin.
  2. Place spoonful of sausage and any veggies on top of English muffin
  3. Blend eggs with cottage cheese and fill rest of muffin tin
  4. Top with shredded cheese and bake at 375 for 20-25 minutes
    *tortilla pieces also work in place of English muffins

Protein Pancake Muffins 

Ingredients

  • 1/2 cup apple sauce
  • 1/2 cup maple syrup or agave
  • 1 tsp cinnamon
  • 2 1/2 cups milk
  • 2 scoops FlavCity Vanilla Cream Protein Smoothie
  • 3 cups pancake mix (I use Kodiak)
  • *1 cup chocolate chips (optional)
  1. Preheat oven to 350
  2. In a large bowl, whisk together apple sauce, maple syrup/agave, and cinnamon.
  3. Stir in the milk, followed by 2 scoops of FlavCity vanilla cream protein smoothie and whisk.
  4. Stir in the pancake mix, being sure not to overmix. Fold in optional mix-ins.
  5. Divide the batter into the two prepared muffin tins and bake for 20 minutes.

Easy Greek Chicken

This chicken works great for meal prep as you can use it in various lunch options. Chicken/veggie/potato bowls, wraps, etc.
