Meal Prep Recipes 2

I like to meal prep to make the week a little easier. Having some grab-and-go options ready for breakfast and lunches makes busy mornings so much simpler!

You can find our WonderOven here and the griddle pan here. I love to use our thermos to transport the lunches to stay warm when heating isn’t an option. I place hot water in the thermos, let it sit for a bit, dump the water out, wipe it down and place the food inside. You can find the thermos’ we love HERE.

Breakfast Burritos

Ingredients:

  • 18 eggs, scrambled
  • 1 lb sausage
  • ½ lb bacon
  • 9 XL flour tortillas
  • Frozen hash browns

Directions:

  1. Cook the frozen hash browns in an air fryer at 375°F until crispy.
  2. Cook the sausage in a large skillet until browned and cooked through. Drain excess grease if needed.
  3. Cook the bacon until crispy.
  4. Scramble the 18 eggs.
  5. Divide the eggs, sausage, bacon, and hash browns evenly among 9 XL tortillas.Fold in the sides and roll each tortilla into a burrito and wrap in foil.

Protein Pancakes

Ingredients:

  • 3.5 cups Kodiak pancake mix
  • 2 scoops protein powder
  • 3 cups water

Directions:

  1. Combine the pancake mix and protein powder in a large bowl.
  2. Add the water and stir until just combined. Don’t overmix.
  3. Heat a lightly greased skillet or griddle over medium heat.
  4. Pour batter onto the skillet and cook until bubbles form on top, then flip and cook until golden brown.

High Protein Creamy Ground Beef Pasta

Ingredients:

  • 12oz banza protein pasta
  • 2 pounds ground beef (I used 93/7)
  • 1/2 cup cream cheese

Directions:

  1. Cook pasta al dente
  2. Brown ground beef, season with garlic powder and salt.
  3. Stir in cream cheese, then mix with pasta.
  4. Salt, garlic powder to taste

Chicken Caesar Wraps

Ingredients:

  • Taylor Farms Caesar Power Salad Kit
  • Rotisserie Chicken, apps. 2 cups
  • XL Tortillas

Directions:

  1. Put all salad contents into a bowl with rotisserie chicken and mix.
  2. Place mixture in tortillas and wrap.

Chicken Pasta Salad

I created this on a whim with the leftover ingredients I had from the other meals and it turned out great!

  • 4oz Pasta
  • Rotisserie Chicken, I used appx 1 cup
  • 1/2 tomato, diced
  • Bacon, as much or as little as you’d like
  • 1 tbsp Basil
  • 1 tbsp Avocado Oil
  • Balsamic Glaze
  1. Combine all ingredients into a large bowl and mix.
  2. Top with Balsamic Glaze.
