Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
My good friend and I are doing something called “The Game on Diet” and it’s a whole program based on eating a balanced diet while setting goals for yourself. It’s also in the form of a game, and since we are both competitive people, we thought this would be a fun thing for us to try. So, for the next five weeks, the meals I share will be catered to a more balanced, low-fat diet. 🙂
Monday
Spaghetti Squash Bake
I don’t have a recipe for this, it’s just something I have put together in the past, and enjoy! First, poke holes in the spaghetti squash all around with a fork, and then microwave for about 10 minutes. It will be hot, so be careful when handling. Cooking this way makes it so easy to cut in half and scoop out the “guts” afterward. Meanwhile, cook up some lean ground turkey, or turkey sausage. Then, mix the cooked meat with a zero sugar added spaghetti sauce, or make your own out of crushed tomatoes and herbs. After that, mix the meat mixture in with the spaghetti squash and put it in a baking dish, and top with low fat mozarella cheese. Then, bake at 350 until melted and bubbly.

I sub sweet potatoes in this recipe and will cook the veggies in olive oil so that I am getting my healthy fats in.

The nice thing about this challenge is that you get one full day off a week, and you also get an extra meal off, too! So, I am sure those will fall during the weekend 🙂

Any night is a great night for Taco Bowls! My wife just stated maternity leave and I’m in charge of meal prep. The next few months will get interesting…
