Welcome to Menu Planning Monday!
For some, one of the worst parts about menu planning is actually deciding on what to make. I find myself stressed out once the late afternoon hits and I have no idea what we are having for dinner, so if I want to prevent that and stay on top of things, menu planning it is. Each week I try to plan for healthy meals that currently do not include any dairy or that can easily be adapted (baby is intolerant), that don’t include a bunch of crazy ingredients and that will get me in and out of that kitchen as quickly as possible.
Here is what we are having this week!
Monday
Paleo Cauliflower Hamburger Casserole

Soccer practice night = Leftovers
Wednesday
Taco Bowl with Avocado Lime Dressing
You guys. THIS. IS. SO. GOOD. I substituted the rice for chicken, and I believe my husband’s words were, “This is phenomenal. I want this again really soon.” So! We are having it again this week!
Super Healthy Kids
Thursday
Date night = Grilled cheese and tomato soup for the kiddos. Since soccer is now on Tuesday evenings for a little while, date nights have changed. And since I am not currently cooking with dairy, this is a perfect night for something cheesy.
Friday
Slow Cooker Sausage Spinach and White Bean Soup
Our whole family gobbles this one up. It’s a go-to!

Saturday and Sunday
The Hubby and I are Portland-bound, so we will be trying out some of Portland’s best!

I really should to do. I just got back from Central Market and I was thinking I wish a had planned my meals because I end cooking the same meals! That sausage spinach white bean soup looks so good!

I did see diced cauliflower at Target the other day ago. I already had cauliflower at home though. I use my Ninja to dice up my cauliflower it works perfectly. 🙂
