I recently came across another recipe by Madeleine Rascan (you can find her here). I love trying her recipes, and this one looked delicious!

Ingredients:
- 1/4 cup sweet potato, cut into slices
- .5 tsp oil of your choice, I used avocado
- 2 large eggs
- 3 egg whites
- 1/8 cup light mozzarella cheese
- 2 links chicken sausage, this was not in the original recipe but I added it to mine
- Fillings of your choice
- Salt and pepper, to taste
Directions:
- Peel the sweet potato completely, creating long, thin strips with the peeler.

- Heat the pan over medium heat and add the cooking oil. Add the sweet potato strips to the pan and spread evenly, cook for about 3 minutes, until they soften and cook through.

- In a bowl, whisk together the eggs and egg whites. Pour the egg mixture into the pan, season with salt and pepper and let it cook until the eggs begin to set.

- Add the mozzarella cheese, sausage and cherry tomatoes (if wanted) on one side of the omelette. Starting from the side with the filling, gently roll the omelette across the pan until it forms a log.

- Transfer to a plate and add any toppings you like. Enjoy!
