I recently came across another recipe by Madeleine Rascan (you can find her here) and these sweet potato beef sliders looked great and decided to give them a try. I always love trying new recipes, especially ones that put a fun twist on a classic, and these sliders definitely caught my attention.

Ingredients:
- 2 lbs 93% lean ground beef
- 1/2 onion, chopped
- 2 lbs sweet potatoes
- Toppings of your choice, tomato, onion of choice (I used pickled), lettuce, ketchup, mustard, cheese
- Salt and pepper, to taste
Directions:
- Preheat the oven to 425F. Slice the thickest part of the sweet potato into six 3/4-inch discs, discard the ends. Place on a baking tray, lightly oil and salt, and roast for 20-25 minutes, flipping halfway.
- Meanwhile, season the beef with salt and pepper, add in chopped onion and mix. Divide into small patties*, and cook over medium-high heat for 3-4 minutes per side, until cooked through.
- Slice the tomato and onion into rounds.
- Assemble each slider with a sweet potato “bun,” beef patty, and toppings of choice. Serve hot and enjoy.
*You will end up with 12-15 patties. I had 14 and used a little over 2 lbs of meat.
