Welcome to another Menu Planning Monday (except this week it’s a Tuesday with school starting this week!) Here I try to plan out healthy-ish, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied. .Whenever I cook these recipes, I film and show how they turn out on my Instagram page, so feel free to stop by to check out how they turn out. J wanted to make this a cold salad, so instead of frying the zucchini, he chilled it and kept it raw. And instead of doing zucchini spears, he bought pre-spiraled zucchini and served it as a cold salad as well.

Spaghetti Squash Boats 

I bought all of the ingredients for these last week, and then we just had too many leftovers and needed to eat those up first, so this week it is!
