Happy Thanksgiving week! This week is looking different for us than expected as I am sure it is for many, but we are going to make the best of it and have Thanksgiving in the van since our house is still under construction. I have compiled a list of what we plan to have this year and will be putting together as much of it beforehand as I can since we only have the oven in the van and our smoker to cook with. Below is what is on the menu for our Thanksgiving meal, and I also added a few extra recipes at the bottom if looking for more ideas.
We are smoking our turkey on the Rec Tec this year, and while we don’t have an exact recipe yet, this is a start!
Chorizo and Cornbread Stuffing
I am not a fan of traditional stuffing, but THIS is delicious! I made it two years ago and it was so good.
These are phenomenal!! The last time they took longer to cook than anticipated, so plan for that!
I bought fried onions to maybe add to these to give them that Thanksgiving feel.
I made this for my husband’s birthday this year and it is SO GOOD. So, so good! I also made it for Thanksgiving last year.

For an even easier version of this, buy the cranberry-orange relish from Trader Joes and put it over cream cheese. Delish!
