Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Salmon
I don’t follow an exact recipe for this one, but it’s basically just spraying the bottom of a 9×13 pan with cooking spray, drizzling the salmon with a little olive oil, sprinkling parsley, basil, thyme and oregano over the top, adding a little minced garlic and a squeeze or two of lemon, and then baking at 375 for about 30 minutes or until nice and flakey. I will be showing how I do it on my Instagram stories this day!
