Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

It’s a Cooking with Shannon and Tina day today! I have teamed up with one of my favorite Instagram buddies, Tina over at @to_mimishousewego to cook a recipe on the same night to show you how it turns out for us both! I chose the recipe this week and I posted it below.
