Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
I am BACK at it cooking healthy meals for my family this week and am actually excited about it! I had WAY too many sweets over the holidays and I am ready for some normalcy once again. So, here is this week’s menu!
Monday
Sweet Potato Salad with Bacon, Walnuts and Lime Vinegarette
I am going to serve this either alongside grilled chicken OR will dice up some chicken in it. It looks like a difficult recipe, but it’s really not!
