Menu Planning Monday #171

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Whew! Last week was a super busy one, and I am happy to say this one is a lot more mellow! But, those Spring sports start up soon, so I really want to savor the slow. Here is our menu for the week:

Monday

Crispy Baked Chicken Thighs 

I love how this recipe is baked instead of fried!

The Salty Marshmallow

Tuesday

Turkey sausage and peppers

I use sweet potatoes in this recipe, and if I am short on time, I skip the potatoes all-together, and just brown the sausage in the pan, and then add the peppers in until soft. That’s it! Super easy.

Favorite Slow Cooker Chicken Vegetable Soup

It’s supposed to be COLD where I live and this looks like the perfect thing to warm us all up!
