Menu Planning Monday #168

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

It felt so good being back in a routine last week, and that included the routine of my weekly menu planning as well. My husband even went so far as to say the chicken recipe was the best chicken I had ever made! WHOO! Here is this week’s menu!

Monday

Leftover baked ham and whatever else is in that fridge!

Tuesday

Paleo Tacos

Egg Roll in a Bowl (Whole 30, Paleo)

This is one of our faves! Double, or even triple the recipe for leftovers!

Turkey Sausage and Peppers

I don’t really have a recipe I follow for this, but this is my EASIEST dinner and is full of flavor and YUM. It is also saved in my Instagram stories under Easy Dinners if you want to see how it looks!

Ingredients: Two packages of turkey summer sausage & three bell peppers in colors of choice (I usually buy one red, orange, and yellow.) Slice the turkey sausage and saute until browned on both sides. Remove from pan and then lightly saute the peppers, letting them cook in those sausage juices. Then, add the sausage back in, and that is it!

  1. OMG! The egg rolls in a bowl look amazing. I’ve never heard of that before! Easy and simple for a weeknight!

  2. This looks absolutely inviting. Planning meals are so important and I always fall short of ideas or thrown out of schedule. i need to step up on planning.

  3. The egg roll in a boll and that taco shell look really intriguing! We aren’t paleo, but my hubby is Celiac, so we often find that the recipes work well for us. Checking these out, thanks for sharing!
