Menu Planning Monday #159

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

I created this menu while in San Diego where the weather was 70 degrees and beautiful, but I knew I would be coming home to the dreary! So, warm comfort food it is!

Monday

Lemon Pepper Chicken

I am going to use coconut flour in this recipe instead of white to lighten it up. YUM!

Dinner at the Zoo

Tuesday

Favorite Chinese Green Beans with Ground Turkey 

I will be taking any spice out of this and will be serving over cauliflower rice

Mississippi Pot Roast 

My husband has requested a big roast, and this recipe looks delish! I will be throwing in some sweet potatoes and baby carrots, too.

  1. That lemon pepper chicken looks DELICIOUS! And I am the same with meal planning – Friday-Sunday, I can try and try to prep and plan, but it never ever goes as planned. It’s always up in the air haha!

  2. Love these options! I really should make some green beans, they’re one of my favorite veggies but I haven’t made them in awhile.
