Menu Planning Monday #149

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

You know the feeling when you just don’t really want to cook dinner? Yeah, I have been feeling that a lot lately! Ha! Hence, the absence from the menu planning. It also means we haven’t been eating as well with last-minute burgers, Costco dinners, and Brinner on the menu.

And while I wish I could say I am back at it this week, the truth is that… nope! Not quite yet! My husband and I are leaving for a little anniversary trip mid-week and don’t want a bunch of food rotting in the fridge, so the goal is to eat up leftovers for a couple of days. BUT! SO as to not leave you hanging, I have rounded up some meals that really look so delicious! I am definitely going to try these when we return. If you make any, let me know how they turned out!

  1. Meal planning can be such a pain, but I’ve learned it’s better on my grocery budget and better for my waist. Eating out or running to the store to buy stuff for dinner ends up costing so much more money!

  2. I think I just drooled on my laptop a bit!! Can’t wait to try the sheetpan nachos. I think those will be a big hit with my boys!!

  3. The caprese chicken kabobs are something I’ve been eyeing for ages and have never gotten around to. Congratulations on your upcoming trip, I hope you have an amazing time!

  4. We used to eat kabobs a lot growing up! I think my kids would get a kick out of them! And I love the sloppy joe on a baked potato idea!

  5. Our family loves kabobs. They’re kid-friendly.. we let them pick their choices! Plus it just looks fun on a stick. Those looks so yummy!
