Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
We had such a wonderful weekend celebrating our sweet boy turning six! Now only if the weather would cooperate and stay nice so we could go out and play!

These fiesta chicken and rice bowls look fantastic and I love that they can be made ahead in the crock pot and heat up well for leftovers.

I make these chicken rice bowls and they are SO good. My kids hate it, and I don’t know why, it’s addictive! My leftover chicken I use to top a mexican salad the next day for my lunch usually.
Those tostadas sound so good! It’s a great way to mix it up!
